How does OS&E elevate the overall guest experience in a restaurant?
The power of OS&E (Operating Supplies & Equipment) lies in its ability to enhance not just the visual appeal but the entire sensory experience of dining. Think about dining with proper silverware and crystal-cut glasses—it immediately elevates the perception of the meal.
The texture of plates, the sound of cutlery gliding across a smooth or textured surface, and even the way glassware is designed to amplify flavour all contribute to this.
For instance, red wine glasses are crafted to allow you to immerse your nose in the aroma, enriching the tasting experience. OS&E, when thoughtfully selected, transforms the meal into a multisensory journey, making it feel more premium and immersive.
Why is it crucial to align OS&E with a brand's concept and identity?
OS&E must seamlessly align with a restaurant's positioning and brand identity. For example, you wouldn't serve a McDonald's burger on a porcelain plate or use minimalist plates for an extravagant concept like Big Mama. It's about context—a fast-food outlet needs durable, cost-effective OS&E, whereas a fine-dining restaurant demands bespoke, high-end designs. The colours, patterns, and materials of the OS&E should complement the restaurant's interior design and tone of voice.
This thoughtful curation ensures consistency in brand storytelling and enhances the guest's emotional connection to the dining experience.
What role does OS&E play in enhancing the sensory and social aspects of dining?
OS&E significantly influences how guests interact with their meals and with each other. Take Assembly, for example—a concept centered on social dining and sharing. We used Indian Thali-inspired designs with a large central bowl surrounded by smaller sharing plates.
This setup encouraged guests to interact, share, and engage with the food communally, fostering a convivial atmosphere. The size, shape, and material of the tableware can subtly guide guests on how to enjoy the meal, whether individually or as a shared experience, deepening their engagement with the brand.
What are the key factors in sourcing OS&E for different restaurant concepts?
Sourcing OS&E starts with understanding the restaurant's positioning—is it fine dining, casual, or fast food? This decision influences everything from the material and design to the cost and scalability of the items. For smaller, intimate venues, bespoke and high-end OS&E may work best. Larger venues or high-volume restaurants might prioritise operational efficiency with standardised options.
Sustainability and supply chain logistics are also critical items must be durable, sustainably sourced, and easily replenished.
The goal is to balance aesthetic appeal, operational functionality, and brand alignment without compromising quality or practicality.
Can you share a challenging yet rewarding OS&E project you've worked on?
One of the most challenging yet fulfilling projects was developing OS&E for a Saudi restaurant in Japan. Japanese import laws required rigorous testing for anything that comes into contact with food, delaying shipments.
To overcome this, we sourced OS&E locally in Japan, ensuring it honoured Saudi culinary traditions while appealing to Japanese diners. The challenge was blending large, shareable Saudi dishes with Japan's preference for smaller, carefully curated plates. Collaborating closely with the chef, we created a presentation style that honoured Saudi authenticity but felt natural in a Japanese setting. This project perfectly exemplified how OS&E can bridge cultural nuances to create a memorable dining experience.
